note this is a one day detailed theory course
(No practical brewing).
Delegates are required to bring a calculator, pen and notepad.
All delegates receive a copy of the course notes.

for the day includes:
- Section 1 - Barley &
Malting Process - From grain to end products.
- Section 2 - Liquor & mash
treatments – Calculation of acid for alkalinity removal & salt
- Section 3 - Mashing &
Sparging – Control and key parameters (density, temperature and pH).
(Approx.12.30pm - 1 hour break. NB Tea & Coffee only provided throughout the day)
- Section 4 - Boiling - Some chemistry in the copper/kettle
- Section 5 - Hops – Details on
alpha acids and essential oils, calculation of bittering levels plus late/dry hopping regimes.
- Section 6 - Yeast metabolism/fermentation - From sugar to alcohol.
- Section 7 - Overview of fining
& maturation – Guidelines on copper, adjunct/auxiliary and cask
